Fast Breakfast!

DH gets up at 5 am to get ready and leave for work. In order to make the morning faster and smoother for him without having to get up myself I do a few things on Sunday. First, lunches; chop celery, baby carrots, turkey, and banana. There are 5 containers for each, except the bananas. It only takes a few minutes to set them up in groups so he can just grab them and put it in his bag. Next, BREAKFAST, quiche and yogurt. DH is diabetic so store yogurt is not an option. Each week a fresh batch of homemade yogurt is made. Usually on Thursday or Friday, then split into to go containers on Sunday. You can check out how to make HOMEMADE YOGURT RECIPE HERE.
Lets get to what you are really waiting for 20 min quiches. These are so easy, fast and easily customization. This week DH just wanted bacon in the quiche. Some weeks it is sausage, bell-pepper, ham, or mix veggies. Any thing you could/want to put in your omelette you can put in your quiche.

Start by preheating the oven to 375. Then gather everything you need.
18 eggs
5 slices thick cut bacon
large mixing bowl
small skillet
whisk
muffin tin (18)

That's it! 

Start by chopping up the bacon into bits.
(I usually cut out most of the fat)

Then brown them in a skillet and drain. 

Next in a large mixing bowl whisk together the eggs

Now there are two options:
1) Put your ingredients into the eggs and mix before pouring into muffin tin
2) {the one I like} place small amount of ingredients into each muffin tin then cover with eggs
Either way fill each muffin slot about 3/4
(I over filled mine here)

Place in oven and cook for about 15 mins.

BAM! Last I put 2 quiche per container and they are ready for DH to heat up for a few second in the microwave each morning for a nice hot breakfast without me having to get out of bed.


NOTE: I use copper bake ware with these. The quiche just pops right out. For other muffin pans you may need to line them in order for your quiche not to stick.
